Good day friends, thanks for checking up on me and sorry this is coming a bit late. Better late than never , they say, right?
Well, I got so busy within the week and this morning I had to attend to an emergency, so for that, this week episode of Saturday dining with is going to take a different shape. This week, there is no specisl guest. Everyone is going to taste the soup, so where's your spoon? Come along. Haha.
This week we are just going to make soup and eat it with wheat. Our Soup is VEGETABLE SOUP
Vegetable soup sometimes called edikaikong is popular in Nigeria especially among the efiks. It is highly nutritious with quite a number of vitamins such as Vitamin B6, Vitamin B12, Vitamin E, Vitamin K and other minerals such as Iron, Magnesium and Phosphorus.
However it loses its nutrients if refrigerated over a long period of time. So while you want to eat much of it for it's nutritional value, make just enough to last for a day or two.
Below is a list of the ingredients for Vegetable Soup.
INGREDIENTS FOR VEGETABLE SOUP
~Dry fish / crayfish
~Meat( Any type of meat)
~Cowskin( pomo)--optional
~Oil( Groundnut or palm)
~Seasonings
~Tomato(optional)
~Pepper
~Vegetables(pumpkin, waterleaf and any other ones if need be)
METHOD
Wash and slice the cowskin
Wash meat and parboil with the cowskin adding salt, onions and a little seasoning.
Put the oil on fire. When hot , pour the tomato and fry.
Add the dry fish / crayfish and allow to cook
Add the washed and sliced vegetables. With the water leaf first, then the pumpkin leaves
Stir very well and allow to simmer for 3-5 minutes
**Alternatively,
You can make vegetable soup without tomato.
~Instead of frying, at the point when meatnis parboiled,
~Add palm oil, seasoning and the dry fish. Cover to boil.
~Add the washed and sliced vegetables( water leaf first) and cook for 3-5 minutes.
Eat with Pounded yam, wheat, eba, rice or Semolina.
