NO BAKE HARIBO CHEESECAKE
This no bake Haribo Cheesecake hits all the notes deliciously: sweet graham cracker crust, creamy filling with fresh fruit and haribos on top. Its going to hit all the right notes!
This is an amazing recipe that I just threw together one day. Everyone loves it so much, it doesn't last long.
I love the colours of this cake as well! So pretty! Enjoy!

Ingredients :
15 digestive biscuits ( you can use any other biscuits you like)
6 tbsp of unsalted butter , melted
500 gr OR 4 Cups of cream cheese
250 gr OR 2 cups of mascarpone cheese
200 gr OR 1 cup of caster sugar
300 ml OR 1 1/4 cup double cream/ heavy cream
Grated zest of 2 oranges + orange food colour
1 lemon ( zested and 1/2 lemon juice ) + yellow food colour
Strawberries 100 gr OR 1/2 cup ( pulsed and blended) + red food colour
1 pack of Haribos
Directions
Step 1: Crush the biscuits roughly. You can either do this by putting them in a plastic food bag and crushing them with a wooden spoon or you can use food processor.
Step 2 : Add melted butter mix through. Put the mixture into a 23cm cheesecake tin and, using your fingers or the back of a spoon to spread it evenly, press it down in the tin to form the base. Put the tin into the fridge to set. This should take about 30 mins.
Step 3 : In a large bowl add your cream cheese, mascarpone cheese, sugar, tiny bit of double cream and mix through.
Step 4 : Put the cream in a clean bowl and whisk until it is the consistency of thick custard. Add to the cheese mixture and mix thoroughly. Divide the mixture into three bowls.
Step 5 : Pulse your strawberries and add into one bowl with red food colouring, add lemon zest and juice into the second bowl along with yellow food colouring and add some orange zest into your last bowl with orange food colouring.
Step 6 : Add first layer over the biscuit base and spread evenly. Place into a freezer for 30 min. Then add your second layer and place back in a freezer. Lastly add your strawberry layer and decorate with haribos the way you like it. Leave the cheesecake in a fridge for at least 4-6 hours or overnight.
Step 7 : Enjoy your cheesecake :) It keeps well in a fridge for 3-4 days.
