Eggplant salad with mayonnaise and onion
Eggplant is among the vegetables with the most beneficial properties for health and can be prepared in a lot of ways, being very tasty. Eggplants are also very good if they are baked with other vegetables.
One of my favorite recipes is eggplant with mayonnaise and onion. Eggplant salad is a very good option in the warm season, and mayonnaise gives it a pleasant taste. Since mayonnaise from supermarkets contains many ingredients that can affect our health, I recommend homemade mayonnaise, using fresh ingredients.
Steps to follow
1. Bake the eggplant
About the eggplant you have to know that the best ones are the ripened on the grill, in the jar of wood. But if you live in the block and can not do this thing, then they are good anyway, either baked on the stove, or in the oven as everyone can.
It would be better if you cook them on a grill in the garden.
2. Drain them from the water
To avoid the bitter taste of eggplant, which destroys the whole preparation, it is important to allow them enough time.
After you pilled them, let them dry for about 2 hours.
Be careful not to use metal knives but wood when you cut eggplants (otherwise they will become black). I use a knife made of wood.
Ingredients for eggplant salad with mayonnaise and onion:
- 3-4 eggplants
- 2 tablespoons of homemade mayonnaise
- a small onion
- salt and pepper
How to prepare the salad:
Cook the eggplant and then put them in a bowl.
Add the chopped onion, mayonnaise, salt and pepper and homogenize the composition.
The salad is served with sliced tomatoes placed on top of fried bread (I like it very much) or as tomatoes stuffed with eggplant salad.
If you don't like mayonesse, you can prepare the salad only with onion.
For eggplant salad with onion you have to add oil gradually while stir well with a wooden spoon, spinning in one direction. After the oil is incorporated, add chopped onion, salt and pepper and 2 teaspoons of lemon juice (optional, I do not use).
