A comforting vegan one-pot recipe you can't go wrong with. It's super delicious, 100% plant-based, protein-rich, unprocessed and low in fat and calories. Ideal weeknight dinner if you ask me.
Feel free to double the recipe and freeze for later. Always nice to have a ready-made homecooked meal for those busy evenings. No more overly processed take-out food for you ;)
Indian-Style Potato Dhal with Toasted Black Sesame Seeds 🍲🥔🌿
Ingredients (serves 2)
½ cup onion, chopped
2-3 cloves of garlic, minced
½ cup carrot, finely chopped
½ cup bell pepper, finely chopped
1.5 cup potato, cubed
1-inch freshly grated ginger, or to taste
½ cup uncooked split lentils (we used yellow split lentils)
1 cup tomato, chopped
2 cups water
Optional topping: toasted black sesame seeds
Herb mix
2 tsp ground cumin
¼ tsp ground cinnamon
1 bay leaf
½ tsp turmeric powder
Sea salt and black pepper to taste
Directions
- Heat cooking over medium heat and saute onion for 3-5 minutes. Stir in garlic, herb mix, ginger and cook for one minute more. Stir regularly.
- Then add carrot, bell pepper, potato, tomato, lentils, and water. Cover and cook 20 minutes.
- Divide over serving bowls and top with toasted black sesame seeds.
