I'm back! Going offline for a few days can do wonders to your body and mind... but I'm glad to be back.
Time to start cooking again! The kitchen and my cat Chivas are the things I always miss when I'm not at home. It feels so good to come back from the market with a fresh load of locally, chemical-free grown vegs and fruits...
... and seeing this little face again!
So let's start cooking again!
Cabbage Salad with Minty Avocado "Mayonnaise"
Ingredients
For the salad
1.5 cup red cabbage, shredded
1.5 cup white cabbage, shredded
1 cup carrot, chopped
2-3 cups salad greens of your choice
For the minty avocado mayonnaise
1/2 avocados
1 small clove of garlic
0.5-1 tbsp extra-virgin olive oil
1/4 cup fresh chopped mint leaves, or more to taste
1 tsp fresh grated ginger, or more to taste
sea salt to taste
black pepper to taste
Directions
- In a blender or food processor, combine all dressing ingredients. Process until smooth.
- Combine all salad ingredients, except salad greens. Toss to combine.
- Layer the salad greens in a bowl, top with veggies and minty avocado dressing.
