Breakfast is brain and energy food, but it can be a challenge to eat healthy in the morning and get out the door in time for work. That's where make-ahead breakfast jars as these come to play. You make them the night before and just grab them in the morning and off you go!
Are you ready to save some precious time in the morning with these irresistible healthy, grab and go, make-ahead breakfast jars?
Ingredients (serves 2 for breakfast)
3/4 cup old-fashioned rolled oats
3/4 cup unsweetened almond milk (or other milk of your choice)
1/4 cup shredded coconut
1/2 tbsp maple syrup (optional)
Pinch ground cinnamon to taste
1/4 cup dried goji berries
1.5 cup diced pineapple diced
1/4 cup unsalted nuts of your choice (toasted or raw)

Instructions
- Stir together the rolled oats, almond milk, shredded coconut, maple syrup, cinnamon, and dried goji berries. Divide the mixture between single serving jars with lids. Cover and refrigerate for 4-8 hours, or overnight.
- To serve, stir the oats and top each jar with the chopped pineapple and nuts. Top with more topping/superfoods such as cacao nibs, mulberries, hemp hearts, etc. if you like.
- If too dry add a little bit more almond milk and stir again.
