Morning on my side of the world and that means a yummy green drink. Which turned out to be red this time. Though I am a real morning person and rarely feel grumpy, today I feel extra energized and happy for no particular reason.
Maybe I had an exceptional good dream I can't remember or is it the morning sun or the green morning drink that is giving me this feeling.... either way I feel great and I am ready to rock this day.
Cleansing Red Morning Devil ππΏπ
This morning beautiful drink thanks its color to the red beets and strawberries. Red beets are an excellent source of folate and a very good source of manganese, potassium, and copper. They also house a good amount of dietary fiber, magnesium, phosphorus, vitamin C, iron and vitamin B6.
But what makes them super special are its high level of beneficial antioxidants. Antioxidants are small little compounds that neutralize free radicals that can severely damage our body and even lead to cancer.
Red beets are a unique source of a special group of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets that have both = been shown to provide antioxidant, anti-inflammatory, and detoxification support.
Next, to the red beets, strawberries are another excellent source of antioxidants, known as polyphenols, hence their beautiful red color. The antioxidants found in strawberries have been shown to fight carcinogens and LDL (or the bad cholesterol) which can lead to heart diseases.
Btw that's chinese kale growing right there... can't wait to add it to my morning drink!
Ingredients (serves 2 for breakfast)
2 cups baby spinach
2 cups water
1 medium carrot peeled and roughly chopped
1 small raw red beet peeled and diced
1.5 cup strawberries (fresh or frozen)
1 medium banana, peeled and frozen for extra creaminess
1-2 tbsps extra virgin coconut oil
1/4 fresh mint
1/2-inch piece fresh ginger
1/2 cup homemade cultured coconut yogurt
Optional topping: hemp hearts
Directions
- Blend spinach and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick for you, add more water and blend again. If you have a high-speed blender you can blend everything at once.
- Optional: Top with superfoods/topping you like.
