Good morning fellow steempunks. I have been a little quiet this week as my lovely kitty cat is sick. She is 15 years old and is starting to feel her age. Yesterday I had to drive to the capital with her to do a blood test so today we know if it is her kidneys or she just became a picky old lady that doesn't want to eat cat biscuits anymore.
Let's hope for the latter.
So I am really sorry for not answering all your messages but I will try to catch up today after my Khmer language class When things go wrong in Cambodia it is not always easy to find a quick solution. Luckily the vet in Phnom Penh was such a lovely guy and helped us a lot. Though I had to spend 7 hours in the car for it I feel blessed that he was there to help us out!
At the same time we are also slowly losing my grandma with a blessed age of 92 she is throwing in the towel too.Gonna miss her so much but there isn't much we can do right. All good things come to an end at some point.
Though we had a good start of the year with our friends coming over after they left we encountered so many issues, sickness, and death among the ones we love. Furry ones and non-furry ones.
Let's hope the rest of 2018 gets a little better. If you too are having a shit start of the year, a virtual big hug is coming your way. Just remember it can't rain forever... the sun is about to break through! But enough talking about sadness as there are so many wonderful things to live for and to be happy...
This green drink for instance. As you may or may not know I am a morning person and love my morning green drinks.
Creamy tropical Coconut Cashew Protein Bash
INGREDIENTS (serves 2-3 people for breakfast)
1 dragon fruit or pitaya (I used a white one this time)
4 passion fruit
2-2.5 cups mango
3 cups bok choy
1/3 cup rolled oats
1/3 cup cashews, soaked
1/2 cup coconut milk
water
DIRECTIONS
- Blend bok choy, coconut milk, and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can blend everything at once.
- Optional: top with toppings/superfoods of your choice (chia seeds, goji berries, desiccated coconut, hemp hearts etc.)
Happy blending!
