Happy Friday fellow steemians. I hope you all had a great week and are ready for the weekend! Since there is a blockchain meet up in Bangkok, my husband will be away for the weekend. I can unfortunately not join him this time. Would have loved spending time in Bangkok again, but it will be for another time :(
The kitchen will be my playground for the weekend. Which is one of my favorite places in the house. And since I'm home alone, feel free to drop by if you are close for some food since I can't cook for 1 person only ;)
But let's talk morning smoothie now. If you never tried parsley in a smoothie, then go on. It's super yum! Especially if you are a parsley lover just like me. Not only does it add some flavor it is super nutritious and cleansing too. A surprisingly small amount of parsley is packed with so much good-for-you plant goodness. To give you an idea, just two tablespoons of fresh parsley provides 2% of your daily need of calcium, iron and folate, 12% of your vitamin, over 150% of your vitamin K; and 16% of your vitamin C.
Parsley has been associated with helping to fight the following symptoms and disorders: inflammation, oxidative stress or free radical damage, anemia, bladder infection, digestive problems (including Irritable Bowel Syndrome or IBS), kidney stones, bad breath, arthritis, bloating, gas, acid reflux, constipation, poor immunity, and skin problems.
Ingredients
2 bananas, chunked and frozen
2 cups cubed pineapple
1 cup fresh parsley
2 cups bok choy
2 cups unsweetened coconut water
1 tbsp extra virgin coconut oil
1 lime, peeled
Directions
- Blend bok choy, parsley, and coconut water until smooth. Add remaining ingredients and blend again.
- If the smoothie is too thick for you, add more liquid base. If you have a high-speed blender you can throw in everything at once.
