In the past, there was widespread belief that carrot tops were toxic due to their bitter flavor. As it seems humans tend to associate bitterness with toxicity. Given their versatile nature and nutritional profile many people are beginning to utilize these greens in their cooking.
Instead of tossing the leafy green carrot tops into the bin or compost pile, why not try to blend them up instead? Sounds weird? I get you I wasn't too sure about adding carrot greens either when I first tried them out. But they are so good for you and when added in moderation in combination with sweet fruits they will not ruin the taste of your smoothie.
Carrot tops are rich in vitamins and minerals, like potassium, iron, and calcium. They also contain protein, dietary fiber, 6 times more vitamin C of carrots, no fat or cholesterol, vitamin K and various phenolic compounds and carotenoids, along with trace amounts of other antioxidants beneficial to our health.
WARNING: be sure to use organic tops to avoid contamination from pesticides and other nasty chemicals used in agriculture.
Tropical Carrot Top Smoothie 🍌🌴🥕
Ingredients
1.5 cups fresh spinach, packed
2 carrots + carrot tops (if too bitter or green tasting for you add more spinach instead of the carrot tops)
1 cup pineapple chunks
1 cup mango chunks
1 banana, frozen and chunked for extra creaminess
2 cups water
2 tbsp extra virgin coconut oil
Optional topping: hemp hearts
Directions
- Blend spinach, carrot tops, and water until smooth. Add remaining ingredients, and blend again. If the smoothie is too thick, add more water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
- Optional: Top with hemp hearts or other superfoods/toppings you like.
