Good morning steempunks. I made some chia pudding yesterday so that's what I am having for breakfast right now. I will have a green drink later. Can't have a day without a green smoothie, right!
Though I love the coconut berry combo you can use any type of plant milk and fruits or other toppings of your liking. You can even add raw cacao powder to the pudding to make a chocolate version. So good too.
This lovely sweet treat can be eaten as a power breakfast, morning or afternoon snack or as dessert. Delicious at any time. Have you tried chia seed puddings yet?

COCONUT BERRY CHIA SEED PUDDING ππ±π₯₯
INGREDIENTS (SERVES 2)
1/3 cup chia seeds
2 cups unsweetened almond milk (or any other nut or seed milk you like)
2 tablespoons maple syrup
1 teaspoon vanilla extract
2-3 tablespoons unsweetened desiccated coconut
1 cup blueberries
1 cup raspberries

DIRECTIONS
- Combine chia seeds, almond milk, maple syrup, desiccated coconut flakes, and vanilla extract in a Mason jar.
Cover and shake vigorously. Or add everything to a small food processor and pulse a few times until well combined. Chill in the fridge for at least 1 hour in the fridge to let the chia seeds do their magic and jellify to milk. - When the chia seeds have turned the milk into a pudding, top with berries and/or other toppings of your choice.
I like to eat the whole fruits, but if youβre not a chunky person, you could mix the berries in the chia seed pudding but make sure to add a bit more chia seeds to make sure everything gets jellified. Or do both. Add some to the pudding and some fresh ones on top.
