Ingredients.
- 1 lb of chicken.
- 1 shallot (crushed).
- 1 ginger (sliced).
- 1 onion (thinly sliced).
- Laska leaves (cut into 1 inch).
- Salt, pepper, chilli, sugar, fresh lime juice.
Instructions.
- In a large pot, add chicken, water, ginger (thinly sliced), shallot and salt. Bring to a boil and simmer for about 45 minutes. To test the chicken is done, pierce it with a chopstick. If the liquid runs clear and not pink, the chicken is done.
- Meanwhile, prepare the onion: In the bowl, mix well onion with 1 tablespoon sugar and 2 tablespoon fresh lime juice for about 20 minutes.
- Remove the chicken and let it cool. Once cooled, shred up the chicken, mix well 300 grams of shredded chicken with 2 teaspoons salt, 1 teaspoon sugar for about 5 minutes.
- In the large bowl, combine the chicken with onion (which you've just prepared), pepper, chilli, laska leaves and mix well.
