Ingredients.
- 500 grams of squid ( rinse, removed inedible portion and cut into large pieces).
- 30 grams of ginger (cut into very fine julienne).
- 1 ginger (crushed).
- 100 grams of wheat flour.
- 3 cloves of garlic (finely chopped).
- Rice vinegar, rice wine, salt, sugar, black pepper, vegetable oil, chilli (optional).
Instructions.
- Rinse the squid with salt, rice vinegar and crushed ginger. Then drain and rinse well with cool water until the water is clear.
- Mix well the squid with salt, a little of sugar, black pepper and garlic for about 10 minutes. Combine the squid with wheat flour in a large zip-top bag and shake to mix, remove the squid from the flour. Set aside.
- Meanwhile, heat vegetable oil in the pan, add cut ginger and stir-fry well until golden, put it into a sieve-keep the leftover ginger oil. Divide the fried ginger into 2 part.
- For spice mixtures: Mix well sugar, salt, black pepper, fresh lime juice and 1 part of ginger. Add sugar or salt to taste. Divide into 2 part.
- Bring vegetable oil to a boil in the saucepan over medium high heat. Put the squids in and deep fry until light golden. Remove and put it into paper towel to absorb oil. Set aside to cool down. Deep fry again over medium low heat until golden and crispy. Take the squids out.
- Heat the leftover ginger into a frying pan, add the squid, 1 part of ginger, 1 part of spice mixtures and stir-fry well for a minutes.
- Serve the squids wih 1 part of spice mixture, chilli (optional).
