Orange turmeric is well known for serving curries and spices that can increase appetite. When I was little, my mother used to give me a traditional drink made from turmeric so that I had an appetite.
Another thing that makes turmeric quite popular, especially in my area, is that turmeric is believed to be able to help increase immunity to avoid the covid virus. For the record, we must also implement a healthy life and not only depend on turmeric.
Well, when I had a cold and felt my body limp last week, I also thought about cooking a soup that could make me feel better. I try to stay calm and think positively. Sometimes it feels really terrible if I catch the virus. So I thought making a dish related to turmeric and ginger would be a good idea.
So, last week I made turmeric soup with thick gravy. It was very good, my mother said, with a very appetizing scent too. In this recipe, I also use ginger so that the gravy feels warmer to warm the body.
For the stuffed vegetables, I used broccoli, mushrooms, carrots, and red potatoes. You can modify the vegetables for the filling according to your taste. You can also add asparagus.

The Ingredients
- 1 cup of button/champion mushrooms
- 1 bunch of broccoli
- 2 baby carrots
- one big size of red potato
- 300 ml of water
- 200 ml of coconut milk
- For the seasoning: 2 stalks of turmeric; 3 cloves of red onions; garlic; gingers; chopped onions; bay leaves, mushroom powder/additional seasoning/vegetable broth; salt.
Cooking Instructions
Step 1
Clean and chop the mushrooms, then set aside.
Step 2
Then also chop the vegetables for the filling. Carrots, potatoes, and broccoli.
Step 3
Time to make turmeric puree. Blend turmeric with red onion, garlic, with a little water. Then set it aside.
Step 4
Heat the oil. Saute chopped onion, flaked ginger, and bay leaves. When it smells good, add turmeric paste. Add 300 ml of water. Bring the water to a boil. Then add salt and seasoning.
Step 5
Add potatoes and carrots and cook until half cooked.
Step 6
Add broccoli and mushrooms and cook until done.
Step 7
When the mushrooms are cooked, then add the coconut milk. Cook briefly until a simmer, then remove.
Step 8
Serve while warm. You can add a sprinkling of chopped celery or a sprinkling of fried onions. Enjoy while the soup is still warm.
I really enjoy this creamy and delicious soup. If you don't like coconut milk, you can skip it, but the gravy texture will be less thick. What do you think of my thick soup recipe this time?
