Today im going to share with you a special jelly recipe! Delicious, refreshing, and easy!
Pandan Coconut Milk Jelly
Ingredients :-
Bottom layer:
6 gm Agar agar powder
200 ml Ayam Brand Coconut Milk
200 ml plain water
3 tbsp sugar
6 pcs pandan leaves
Top Layer:
12 pcs pandan leaves
200 ml water
2 tbsp sugar
3 tsp agar-agar powder
1/4 tsp green food coloring (optional)
Method :-
Bottom Layer:
In a medium pot, add in water, sugar, pandan leaves and agar agar powder. Bring to boil on medium heat . Stir till sugar and agar agar powder dissolve.
Once boiled, add in coconut milk immediately and turn off heat.
Pour into moulds 3/4 full and leave to cool in the fridge for about 20 mins till harden.
Top Layer:
Cut pandan leaves in smaller pieces and add in water and blend. Sieve mixture to achieve 200ml pandan juice and discard residue.
Bring the pandan juice to boil and add in sugar and agar agar powder and cook over medium fire. Stir to dissolve.
Once boiled, remove from fire.
Remove the coconut cream jelly from fridge, pour the pandan juice mixture on top of the harden jelly.
Chill in the fridge before unmoulding to serve.
