There has been a recent heated debate regarding this dish called "sisig". People from where this dish originated from are claiming that the true sisig should not contain any mayonnaise and egg. Well, anyway this made me wonder if they will call out this one too because it definitely deviated a little from the traditional look due to the presence of a "calamansi foam".
This is my entry for 's #foodphotography contest, and I chose this because I want to celebrate Filipino cuisine!
For those who are curious, this dish is made with pork's head and liver. I know it may sound a little intense, but those are really the primary ingredients of sisig. It's also normally spicy and a bit sour from the calamansi.
