This is a healthy vegan nachos recipe. And it tastes very good. Even meat eaters will like it. Plus, it's mostly raw food. The chips in this recipe aren't raw but you can make some raw chips on your own.
Vegan Nachos Recipe Ingredients
There's 3 things you need to top your chips with. They are:
- Walnut mix
- Vegan queso
- Your toppings of choice
Walnut Mix
The reason why you want to have the walnut mix in there is as a meat substitute. It's filling and healthy. Walnuts are a great source of omega-3s. To make it you will need:
- 2 cups of soaked walnuts
- 2 tbs Nama Shoyu (unpasteurized soy sauce)
- 1 tbs cumin
- 1 tbs coriander
- ketchup (to taste)
Vegan Queso
Vegan queso is delicious! It's what really makes this recipe stand out, but maybe that's just me. I like my food wet and saucy. This vegan queso is good on many dishes. Sometimes I even chop up fresh jalapenos from the garden and add it to the queso. Here's what you'll need:
- 2 tbs coconut oil
- 2 tbs flour
- 2 cups nut milk
- garlic powder
- onion powder
- salt
- black pepper
- nutritional yeast
- turmeric
Toppings
- lettuce
- tomato
- onion
- capers
- jalepanos
Directions To Make Vegan Nachos
- Soak walnuts in water for roughly 4 hours
- Blend walnut mix ingredients in a food processor
- Heat oil in a pan and then add flour to brown it
- Mix the rest of the vegan queso ingredients in with the flour and oil
- Chop desired toppings of choice
- Add walnut mixture, toppings, and queso on top of chips.
