Since my family won't be in town for Thanksgiving, we decided to have Thanksgiving in July! This is one of the dishes I just finished making.
Couscous Feta and Lime Salad
5 cups couscous prepared and cooled
2 tsp olive oil
I tsp butter
1 can corn, drained
2 cloves garlic diced
1/2 small red onion diced
1 cucumber seeded and cut in 1/4 slices
1 cup cherry tomatoes halved or sliced
1/3 chopped cilantro
1/3 cup crumbled feta
Juice of 2 limes
1/3 Italian dressing
Salt and pepper
Melt butter in oil, add garlic and corn kernels, cook and stir until garlic is golden.
Add this and the rest of the ingredients to couscous. Salt and pepper to taste. Refrigerate for at least until an hour.
