Mung bean soup is one of my favorite Filipino dish since I was a kid. This used to be cooked by my mom. I love it too much I made sure I learned to cook it the right way. This is probably the healthiest dish I can cook. I make sure to cook this weekly. Not only it is affordable and healthy, it is so pleasing to my taste, too. I miss it when I don't cook it in a week. I love it cooked this way, it has little pieces of pork rinds and leaves of another healthy veggie, bitter gourd. Everyone in the family loves it, like it's one of our traditional dishes.
