I've never cooked Braised Pork Trotter before, so this is my first effort to cook it. I've seen my mom, my sister and brother cooked it before, so I have a vague idea on how to prepare it, the required ingredients and the final taste is up to how you like it. I've tried this menu in other restaurants before but it's either too sweet or too sour for my liking, so for this menu, I will try to suit it to my taste and hopefully, the others will like it.

How to cook it
- Pour some cooking oil into a pot of a wok then fry the ginger and star anise together.
- Add the meat and fry until fragrant or when the meat looks a bit whitish.
- Add water until it covers the entire meat and wait until it boils.
- Add the Red Dates, Black Vinegar, Dark Soy Sauce, and a bit of Salt.
- Use low heat and cook for 1 hour, or until the skin is tender.
- Keep on tasting until it suits your taste, not too sour and not too sweet.
