Peaches and Blueberries! Oh My!
Did I tell you how much I love peaches? Well, I do! Unfortunately I rarely find good peaches!
But this week…. I got lucky!
Happy Monday my Fruits and Veggie friends! I hope you all had a few moments for rest and relaxation this weekend. No time for rest at the Bird house, we’re prepping for a week with a lot of visitors! That’s fine with me, it just gives me another great opportunity to share delicious, healthy treats with friends.

Blueberry Peach Delight
Actually, I’m not sure which I like more, Blueberries or Peaches! I nervously purchased 5 fresh peaches last week at the market. I knew I was taking a risk!
When I got home, I sliced one of the peaches and took a bite, oh my!
Peach-ilicious
- Gluten Free Flour (1 ½ cups)
- Baking Powder (1 tsp)
- Baking Soda (1/2 tsp)
- Dairy Free Butter (2 tbsp.)
- Maple Sugar (3/4 cup)
- Flax Eggs (2)
- Vanilla (1 tsp)
- Coconut Yogurt (3/4 cup)
- Fresh Peaches (2)
- Fresh Blueberries (1/2 cup)
The Peaches…
were the first to slice. Wash, peel and slice these nuggets of goodness! Of course I had to taste them again.
Blueberries…
were next in line. Wash them thoroughly! Blueberries, packed with antioxidants, yum!
Sift, sift, sift…
all of the dry ingredients together in a bowl. Set aside for later. Now mix the butter, flax eggs, vanilla and yogurt on low speed with your mixer. When everything is well combined and creamy gradually add in the flour mixture. Mix until just combined. You don’t want to over mix with gluten free flour.
Pour that Dough…
into a small spring-form pan. Arrange the peaches on top and then surround the peaches with lots of Blueberries I like to press them into the dough and then add more on top! Bake at 350 for 50 minutes or until an inserted knife comes out clean.
Now I know…
you want to dive into this lovely delight but Nope! You have to let it cool for at least 30 minutes to an hour! Just walk away…you can do it!
