I made this twice this week, because it's so awesome!
If you don't have all those spices in your pantry, use curry powder or any curry paste (flavours might be quite different).
Ingredients:
- 2 tbsp olive oil
- 2 onions
- 3 cloves garlic, chopped
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp dried paprika
- 1 can diced tomato
- 1 can coconut milk
- 1 can chickpea, drained and rinsed
- 2 tomatos, quartered
- 1 small head of broccoli (optional)
- 1 zucchini (optional)
- some fresh coriander
Directions:
Slice the onions thinly. Add oil in a pot and stir in the onion, cook for 3-5 minutes then add garlic.
Add all the spices and fry with the onion for a minute. Add a can of diced tomato and simmer for 10 minutes.
Add coconut milk, chickpeas, broccoli and zucchini and simmer for another 5 minutes.
Add the tomatoes 2 minutes before turning off the heat.
Serve with Basmati rice and top with fresh coriander.
