Mark and I decided having a proper healthy meal today, it's been a couple of days I must be honest.
We are going to London in a few days (to meet our friends and
), we know we are not going to behave and eat like there's no tomorrow. Sooo, to balance with the following days and avoid leftovers and rotten vegetables in the fridge, we decided cooking everything that is about to "expire" in the next days. To be honest, isn't much, so just simple meals :)
My main ingredients were:
- Chicken
- mushrooms
- bell peppers.
Whenever I feel no creative at all, I just check recipes on Pinterest. After no efforts I go for Balsamic-Soy Sauce-Garlic Mushrooms.
First of all I added in a pan:
- one tablespoon of oil (I regret no adding less tho)
- two tablespoons of balsamic and two of soy sauce
- one tablespoon of honey
- garlic
- gimger powder (could perfectly be in natura)
- salt and pepper
Then I added the mushrooms and stirred everything. Let it bake a bit and covered it in low/medium heat.
In another pan I cooked my rice, I usually cook it with salt and garlic.
And in one I added:
- garlic (yes, bonkers about garlic)
- one tablespoon of butter
- chicken
- salt
Also stirred till it get partly cooked and then added the bell peppers chopped in stripes.
15min later I had my rice, chicken and mushrooms cooked. And voilà!
I know, not my best food picture, but I can garantee, it was super delicious :)
Sometimes we get lazy and run to the supermarket to buy more food, when we could only use our imagination and cook what we already have. I'll for sure do it more often, use my time to cook with creativity then wasting it doing groceries.
