Great tasting and all from scratch, you can use this in your favourite pastas and gnocchi.
Ingredients
- 2kg of tomatoes
- 1 large onion (loosely sliced and chopped)
- 4-5 cloves of garlic (sliced or chopped)
- 2 bunches of basil (picked), about double whats in the picture below
- double pinch flake sea salt
- 2 tablespoons Extra virgin olive oil
The Methedology
1 - cut a cross in the tomato skin.
2 - soak the tomatoes in boiled water for 5-8 minutes, place a plate to stop from floating.
3 - Drain the tomatoes, and peel the skin off.
4 - squeeze gently (careful of backfire) the tomatoes into bowl.
5 - Dice the rest of the tomato after the squeeze.
6 - Sweat the diced garlic and onion in a pot for about 5-7min on med heat.
7 - Add the tomatoes to the pot and stir.
8 - Add salt, stir and cook for about 20 min.
9 - Add the basil to the mix and stir in for 2-3 minutes.
You're ready to go with your favourite pasta and gnocchi.
