This food is made from the internal organs of a pig that are finely chopped after a thorough cleaning. They are sauteed with a lot of spices, usually this is prepared hot and spicy. After sauteeing, water is added and when water boils the blood of the animal is added which is the main ingredient why this dish is called Dinuguan derived from the Filipino word dugo which means blood. For those who are not fun of eating internal organs because of having arthritis, they are replaced with lean pork meat.
