Chop onion, garlic, carrots, zucchini, chayote squash or any vegetable you have on hand, and saute them.
Shortly after add mushrooms cover and let it all cook in it's own juices.
Blend a couple of tomatoes, and a veggie broth cube.
Add to the mushroom and vegetables in the pot.
Add oregano, black pepper, and crushed chili.
For the pesto start with sesame seeds, grinding them to a powder. ( I use them in place of nuts because they are economical and good for you.)
Add approximately one tablespoon of olive oil, the juice of one lime, garlic and sea salt. Add a bit of water as well to get a more runny consistency.
After it is thoroughly blended add approximately two cups of mixed greens, spinach and kale. (of course basil would be wonderful as well)
Toss the penne with the pesto coating all of the pasta.
Spoon on the mushroom mixture.
