Yesterday was Costco day and only a few who may stumble upon this post know what I mean.
It's the day my in-laws, where we live go across town to Costco which gives me the opportunity to cook in the kitchen.
I always need to go full speed in order to have time to clean up the evidence.
It has been perfectly hot weather so melons are what I like to start the day with if I can.
I went to the corner grocer to get canteloupe and watermelon. When I tasted them they were not as sweet as I'd hoped. That changed everything. It would now be a savory Mexican style fruit salad with chili, lime and salt which is something common in Mexico and probably other hot countries including Thailand, although I never had it there.
I chopped up the melon and added pink salt, lots of lime, about three, and chili powder. In Mexico they have a special one for this and they sometimes use a chili sauce.
I also added a grapefruit, an orange, and a cucumber. People including myself usually don't think of a cucumber being a fruit but it is. So this was an all fruit salad. This is definitely not for everyone but if you like chili and lime than you may enjoy the salt sweet and spicy combination.
After the fruit salad I made a curried lentil stew with spit pea flour pancake instead of rice.
Curried lentil stew
2 cups cooked brown lentils
1 cup chopped red pepper
1 chopped medium carrot
4 cloves garlic
1 cup chopped red onion
1 teaspoon minced ginger
Juice of a lime
1 chopped tomato
2 cups chopped kale
2 tablespoons veggie soup broth powder
1 tablespoon Jamaican curry powder
1/2 teaspoon cumin
1 teaspoon dried or fresh hot chili
1 teaspoon cane sugar
1/2 teaspoon ground coriander
1 teaspoon pepper
Salt to taste
I ended up cooking this outside. The spices in the house would have been a major trigger.
I had some fresh basil, chives and oregano from the garden where the kale came from so I threw them in as well.
I didn't add the kale until the end to keep it green as possible.
This was the first time I had ever purchase spit pea flour. I really can't notice much difference in taste to chickpea flour, although there is one.
Split pea flour pancake
2 cups split pea flour
Salt to taste
1 teaspoon garlic powder
1 teaspoon onion powder
Water
When I added the water gradually, I just added it until the consistency was the way I wanted it. I could pour it in the pan and tilt the pan to spread it out. I am looking forward to next time when I make it more like a thin crepe if it works. I once had an Ethiopian bread or crepe called Ingera. I really liked it and at the time it came with lentils. We ate it without utensils using the bread to scoop it up. I prefer utensils though.It's what I'm use to,
