Got a blue sky day for Mother's Day. Was ready to make breakfast for my wife. She was not going to be seeing her son as he is sick. A downer there as he was due to bring her grandson over yesterday - too sick. We did go shopping - picked a different set of shops with less walking. That did get her out the 4 walls
I went walking a loop later - past the pub with a few Mother's Day hangers on

Popped up to Regimental Park, home to Killara Croquet Club to see if anyone was playing pickle ball. They were - got to meet the local club organiser. We will work on running midweek sessions when my wife is in the office

Did make a Mother's Day dinner - first time making Thai Beef salad. Make a paste of coriander stems, crushed garlic and deseeded chilli (just one). Can add shredded ginger too. Wet parts - fish sauce, squeezed lime juice, teaspoon of sugar. Keep it simple
Salad bits - sliced cucumber, halved cherry tomatoes (the riper the better), finely chopped onion (half a small one)
Green bits - handful of mixed leaves, as much again of coriander leaves and mint leaves. All of this can be done in advance.
Sear some sliced steak - rump, sirloin or fillet. Get it nicely browned. I did mine on bbq. Recipe says to rest for 10 minutes. Nah - best served sizzling hot
Bring dressing and sauce together - toss it. Save a bit of sauce to drizzle over the meat when you lay that on top. Sprinkle chopped peanuts and enjoy
