It's the last round of #steemit-ironchef challenge hosted by ! and this weeks theme was Burger!
I have a history with Burgers, it was the one food that was holding me back from my fully vegan lifestyle (working in a restaurant that served juicy organic beef burger, cooked by an excellent chef, medium rare with chili and garlic sauce on top! - no my stomach isn't rumbling right now! ) Yes as you can imagine someone transiting into veganism and then working in an environment where these were getting served up was pretty hard and I relapsed sometimes, I have to admit!
In the end I had to take control and that's when I started making Aduzaki and Beetroot burgers, full of iron and protein and a deep red color that weened me off that medium/rare craving! It worked and also quitting that waitress job also helped too, was just a bit of a conflict of interest at the end of the day! It was obvious to me to make my specialty but like always when it comes to creating for a contest, I don't always have the final idea completely solidified until i'm in the middle of the action.
I actually ended up making a whole bunch of different foods that I just didn't use in the end, I must of been cooking for 3 or 4 hours, (not including the time taken to pre-soacked and pre-cooked different types of beans and lentils during the day) I completely got lost in the moment and you don't even want to see the state of my kitchen after that, I took a picture but I didn't want to ruin my post by sharing it LOL the whole time I had in my head to make some colorful dips and it just clicked that the burgers had to be colorful too. Of course as a vegan there are so many different options for vegetables to use in a veggie burger, the possibilities are endless!
Ingredients
Red Burger
Beetroot
Adzuki Beans
Spring Onion
Himalaya Salt
Seasoning (I used Khmer Tom Yum)
Chia egg
Purple Burger
Purple Cabbage
Brown Lentils
Spring Onion
Himalaya Salt
Seasoning (I used Marsala)
Chia egg
Green Burger
Raw green cauliflower
Chickpeas
Spring Onion
Himalaya Salt
Seasoning (I used Khmer A Mok)
Chia egg
The burgers are very fragile if no flour is used, I don't mind this normally for myself and I didn't used it in the red and green burger but because the purple burger was so moist (water got in the mix from the lentils not being properly drained) so I added spelt flour and the burger was a lot firmer than the others.
The sauces were made with mostly the same ingredients as you see above, red=beetroot, purple=cabbage, yellow=yellow cauliflower + a touch of avocado and then you can add chickpeas or I use sesame seeds a lot along with whatever spices of you want, you can use oil, water or lemon juice to soften the mixture and help it to blend nicely
I'm really happy with the end results, I find the colors so uplifting and there's something about it that just gives joy to the inner child, to be able to eat naturally colorful food and that is tasty and looks good too, it's so much fun! It's the first time I've made a purple burger and a purple dip and I will definitely try it again!
Because we all need a little bit of a taste of the rainbow in our lives!
