Mutton nihari is a really famous meat dishh from lucknow. It is a thick gravy, purposefully built to be heavy in protein, carbs and fats
The reason: the dish was originally meant to be for labours, a heavy meal to prepare them for the physically heavy day ahead. 'Nihar muh' means empty stomach btw so mutton nihari was meant to be eaten empty stomach, as a breakfast meal
But when we eat it we dont do heavy physical work, and it surely is not the only meal of the day.
