Kids every day need to have some snacks before going to school. I used to prefer to give them fruits but sometimes they ask for biscuits and biscuits available in the market are not at all healthy. It is also difficult to find vegan biscuits. To overcome this problem today I made oats almond cookies as my kids liked it very much when I prepared last time.
Ingredients
- Chickpea(gram) flour 1 cup
- Oats flour 1 cup
- Sorghum (Jowar) flour 1 cup
- Almond coarsely grind 1/2 cup
- Unrefined cane sugar(Khandsari or Muscovado) 2 cups
- Vegetable oil 1 cup
- Vanilla extract 2 tsp
- cardamom powder 1/2 tsp
- Baking powder 1tsp
- Pink Himalayan salt 1/2 tsp
- Water 1 tbsp if required
Procedure
- Mix all dry ingredients properly.
- Add oil and vanilla extract and knead it. It won't be lump like formation so if required can be added 1tbsp of water. I didn't add any quantity of water.
- Make shapes with the help of molds.
Cookies before baking
- bake for 15-20 minutes in an oven pre-heated at 130-degree Celsius.
- Cool down to room temperature and store in an airtight container.
