Idli is a steamed rice cake originated in the Indian subcontinent and mostly a part of breakfast but also served in lunch and dinner. Traditionally Idli is made by fermenting the batter but nowadays so many quick recipes are also popular. Idli made by traditional method is the most delicious and healthy. It takes about 16-20 hours to prepare the batter. Making a perfect batter is the most important to make it delicious.
In my last post Dosa "a fermented pancake" : An authentic south Indian dish I described the procedure to make the batter for dosa and the same batter can be used to make idli.
It needs molds to make idli which is greased with oil and cooked in steam for about 15-20 minutes.
Once it is cooled down idli is de-mold and served hot with Sambar and Coconut Chutney
