Teach me how to dougie BAKE

I’ve started this blog as a helpful guide to baking and caking as I hear time and time again from so many of you that you don’t know how to bake, or cake, or that it’s just too difficult!*
(And for all the singletons trying to learn a recipe n domesticate yourself to get a bf or gf, I feel you, but who needs one when you got yo self some CAKE)
I’m kicking off the blog today with my favourite recipe for new bakers. It’s simple, it’s quick and it’s store cupboard friendly (you probably have most of the ingredients in your kitchen already)

...BANANA BREAD!
Plus, everybody loves it, unless.. well you don't like bananas. Soz.
*Well, yeah, I’m not gonna beat around the bush, I've been there, 2 am sat in front of my oven, nail biting and on the verge of tears waiting for my choux pastry to aerate… but practice makes perfect! as my Year 4 teacher used to say. And it won’t always be that way. Promise.
YOU WILL NEED:
This is a super quick and easy loaf to make and you don't need any kind of clever, expensive machinery that will whip up your entire kitchen into a 3 tier wedding cake. Just a 2 lb loaf tin. You can get one of these from your nan’s cupboard. Or a local supermarket. They’re usually less than a fiver.
Preheat your oven to 150 C
INGREDIENTS
- 125g butter (unsalted or salted, it doesn't matter, whatever you can get your hands on)
- 150g sugar (use granulated, it’s cheaper, it’s in your cupboard and we’re going for rustic so it doesn’t matter with this loaf)
- 2 very ripe bananas, mashed
- 190g self raising flour
- 60 ml milk (don’t even stress about measuring this out, its the equivalent of 4 tbsp!)
- Yes there is an egg in my photo, but you know what just ignore the egg, I’m making this as easy as possible so don't even think about the egg!
METHOD
1 . Item 1 Start off by lining your 2lb loaf tin, grease it up with a squidge of butter and a pastry brush (or kitchen roll) and then shove some baking paper in there. Don't worry about making it look neat, we’re going for RUSTIC remember ;-)
2 . Melt your sugar and butter in a saucepan over a medium heat
3 . Meanwhile, bananas = pure mash up
4 . Remove your saucepan from the heat and add your mashed bananas, mix well
5 . Stir in the flour (don't forget to use a wooden spoon 'cause it looks REALLY RUSTIC and trendy..)
6 . Aaand then stir in your milk..
..your mixture will look like porridge
7 . Now you're ready to pour into your loaf tin :)
..and I've thrown some brown sugar on top to make it look snazzy..
8 . Stick it in the oven at 150 C for 35-40 mins
You can check if he's done by sticking a skewer/sharp knife in the centre - if it comes out clean you're ready to go, if not put your loaf back in the oven and check him every 5 mins
Variations
- Health Monkeys - try using wholewheat flour and 1 1/2 tsp of baking powder in place of self raising flour.
Try replacing the sugar with 160 ml of honey or agave nectar. - Gym Bunnies - add a couple of scoops of protein powder in with your flour mix, or even that egg I told you not to think about can be added when you add your mashed bananas.
