DRAGON FRUIT
These fruits are commonly known in English as "Dragon fruit", reflecting its vernacular Asian names. The names pitahaya and pitaya derives from Mexico, and pitaya roja in Central America and northern South America, They are sour and refreshing, with juicier flesh and a stronger taste. The fruit comes in 3 colors: 2 have pink skin, but with different colored flesh (one white, the other red), while another type is yellow with white flesh. It has some uses in traditional medicine, Dragon fruit is low in calories and offers numerous nutrients, including Vitamin C, phosphorus, and calcium, plus fiber and antioxidants.Many variations of food we can make from this fruit for example Salad, Cake, Pudding ,Baverages and many more.
Dragon Fruit Salad
Ingredients
- 1 large Dragon Fruit
- 1 cup Grape tomatoes
- 2 Oranges
- 1 Cucumber
- 1/2 cup pineapple
- 1/2 head Iceberg Lettuce
- 1/2 cup fresh semi sweet Cherry
- 1/2 Black ripened Olive
- 1/4 cup Raspberry Walnut Dressing
Making Steps
- Peel the dragon fruit and dice, slice the tomatoes in half, peel and section the Oranges. Shred some leaves the Lettuce, peel and remove seeds of Cucumber, cutting dice the Pineapple, remove the stems and pits of Cherries. Leave the Olives whole.
- Except the large Lettuce leaves mix all the other ingredients. Put on the leaves. Serve with Walnut Dressing.
Lemon Dragon Fruit Juice
Ingredients
- 1 Dragon Fruit
- 1/2 Lemon
- 8 oz. vanilla yogurt
Making Steps
- Peel Dragon Fruit and dice, cut the Lemon into smaller pieces together with its skin.
- Put Dragon Fruit, Lemon and Yogurt into Fruit Juice Blender, blend all the ingredients evenly.
- If you want the cool juice,just add the Ice Cube and blend .Serve with a slice of Lemon.
Dragon Fruit Cheesecake
Ingredients
Biscuit base
- 80 grams biscuit crumbs
- 40 grams melted butter
Cheese filling
- 100g red Dragon Fruit puree
- 250g Cream Cheese, room temperature
- 200g Plain Yogurt
- ½ tablespoon Lemon juice
- 1 tablespoon Vanilla extract
- 120 grams White Chocolate
- 4 tablespoon Icing Sugar
- Soaked 1 1/2 tablespoon Gelatin Powder and 2tablesoop Water for 2 minutes
Making steps
- Biscuit base: Grease the sides of a 6 inch removable cake pan and line the bottom with parchment paper. Blend Biscuits coarsely and mix well with Melted Butter. Pressing the Biscuit crumbs with your hand at the bottom of the lined cake pan, put in the fridge.
- Cheese Filling : Melted White Chocolate under double boiler and stir till to smooth and leave to cool. Melt Gelatin under double boiler and keep warm.Place Cream Cheese, Yogurt, Melted White Chocolate, Icing Sugar, Lemon Juice and Vanilla extract in a food processor and blend until smooth. Then continue blending and pour in melted Gelatin and blend mixture well again.Divide Cheese filling mixture into 2 portions.
- First Layer: Add 3 tablespoon of red dragon fruit puree into one of the plain cheese mixture. Gently stir well with a hand whisk and pour into prepared cake pan and spread evenly, then place into freezer for about 15 to 20 minutes to semi set.
- Second Layer: Add ½ tablespoon of red dragon fruit puree (for a lighter colour) into the remaining plain Cheese mixture and gently stir well.
- Then take out the cake pan from freezer and gently pour the second layer of Cheese mixture on top of First layer semi set Cheesecake.
- Refrigerate the whole Red Dragon Fruit Cheesecake for a few hours or overnight. Decorate the cake as desired before serving.
