Crabs Cheese Balls
Ingredients
2 cup Claw Crabmeat
1 cup coarsely ground Cornmeal
1 1/2 cup Flour
3/4 tablespoon Baking Powder
1/4 tablespoon Baking Soda
1/2 tablespoon Cayenne Pepper
2 tablespoon finely chopped Celery Leaves
1/2 cup Ricotta Cheese
1/2 cup Parmesan Cheese
2 large Egg
Buttermilk
Salt and Pepper Powder
Oil to deep fry
Making steps
Whisk eggs and set aside.
cornmeal, flour, baking powder, cayenne, baking soda, salt and pepper powder in a bowl. Add in crabmeat, cheese and celery leaves. Add in the eggs and pour in buttermilk, mix until combined and the You have a good batter, not too thin but not too thick ( as you wish ).
Drop tablespoonfuls of batter into hot oil, being careful not to over- crowd the pot, turning occasionally until golden brown, fry about 3 to 5 minutes, lift it up and drain to a paper towel-lined plate.
Transfer to serving plate and serve with chili sauce and mayonnaise.
