Spices Chicken Grilled
Ingredients
1 Chicken, cut into 4 pieces
2 cm Galangal, crushing
4 Bay Leaves
2 Stalks Lemongrass, crushed
1000 cc Coconut Milk
Refined Spices
8 pieces of Red Onion
4 cloves of Garlic
10 pieces Candlenuts
1 tablespoon Coriander
1 tablespoon Cumin
1 tablespoon of Fresh Pepper
2 tablespoon Brown Sugar
Salt to seasoning
Dabu-Dabu Sauce
250 g Plum Tomatoes, diced (red and green, if available)
10 Cayenne pepper, chopped (both red and green)
1 Red Onion, diced
2 tablespoons Lime Juice
1 tablespoon Olive Oil
1 teaspoon Sugar
Making Steps
In skillet boiled coconut milk with refined spices, bay leaves, galangal and lemongrass, cook about 20 minute. Add in the chicken, cook until the spices soak and thick.
Grilled chicken and polished with remaining seasoning .
Dabu-Dabu Sauce : Mix all the ingredients together, store in the refrigerator for at least one day before using.
Serve on a serving dish chicken grilled with warm rice and dabu dabu sauces while still hot from the grill. Hmmm Yummyyyy
