This is one of my favorite rolled cakes. I usually put a lot of filling in it, and because of this the taste is very intensive and delicious.
Besides wallnuts, I add raisins as well for it not to be very dry.
Here is the recipe.
Ingredients.
For the dough:
- flour 400 g
- milk 150 ml
- butter 100 g
- sugar 60 g
- dry yeast 7 g
- egg 1 unit
- a pinch of salt
For the filling:
- ground wallnut 300 g
- sugar 150 g
- raisins, dried apricots as wanted
To make the dough:
- Warm a bit milk, add yeast and sugar and leave for 10 minutes.
- Sieve flour to enrich it with oxigen. Add a pinch of salt.
- Melt butter and add it to the flour.
- Then add an egg and the predough (p.1).
- Beat the dough thoroughly during 10 minutes.
- Make a ball, cover it and leave in a warm place for 30 minutes.
To make the filling:
- Mix wallnut with sugar, add a bit of water (to make the mass sticky).
- Add raisins and dried apricots.
Divide the dough into 3 parts. Using some flour, if needed, make a rectangle shape of one of them. It should be thick as 5-7 mm. Put the filling on it, covering 2/3 of the surface and leaving space from the ends about 1,5 cm. Make a roll. Do with the rest 2 pices of dough the same.
Put the rolls on the cookery parchment paper onto a baking sheet and leave them for 20-30 minutes. Meanwhile, switch on the oven at 180C.
After cover the rolls with beaten up egg and place the rolls into the oven for 30 minutes.
