Today I brought another great recipe for this blessing month Ramadan, the Mauritian chicken soup with calabash and zucchini,
It’s a super delicious and so healthy, it’s a good menu for dinner that you can serve it with dried fruits like dates and dried figs!!!!
To prepare the Mauritian soup with chicken you need:
INGREDIENTS:
- 500 g of chicken
- 1 Small calabash
- 2 carrots
- 500 g of pumpkin
- leek
- onion cut finely
- 1 Small cup of crushed sweet corn
- 1/2 zucchini
- 2 Tomatoes
- thyme
- 1 clove of cinnamon
- 3 grain of cardamom
- coriander
- olives oil mixed with vegetables oil
- salt, Black pepper
- 1 tablespoon of garlic paste
- 1 tablespoon of ginger paste
DIRECTION:
- put the onion with 1 leek cut finely, add the olives oil with little vegetable oil, and stir them well.
- cut the tomatoes and add to the pressure cooker , and cut the chicken in small pieces, and stir them well until the mixture dry.
- put the vegetables which you cut them into small pieces, then add the water , let all cook, and when cooked garnish it with little coriander.
