It is rainy day in the Philippines today. There is a typoon visiting our country now.
It is cold weather and the best food for today is a hot soup.
Today, i will cook SOPAS, a Macaroni Soup.
This is very popular here in the Philippines mostly on a cold weather.
Here are the ingredients:
200 grams Macaroni
6-8 cloves of garlic
1 medium red onion
1 small can of evaporated milk
1 chicken broth cube
1 beef broth cube
Butter
Fish Sauce
Salt
Black Pepper
Coocking oil
Water
Procedure:
Chop garlic and onion.
My tip is chop the garlic and onion finely as posible. That way, the taste and aroma of it is maximized.
Saute onion first on a cooking oil.
This is another tip. The onion will caramelized.
Then, add the garlic.
Dont over cook the garlic cause it will affect the taste of our soup.
Add the macaroni, saute it together with onion and garlic.
This way, the macaroni will absorb the taste of onion and garlic.
That is another tip.
Add water and bring it to boil.
Constant stirring is best so that the macaroni will not stick to the bottom of the pan. The taste will also affected if the macaroni is sticked and burned.
When the macaroni is already soft, add the broth cubes, both chicken and beef. Then add a pinch of salt and 2 tablespoon of fish sauce.
This will depend on your taste.
Another tip is not to stir after you add fish sauce. I dont know the reason but my grandmother taught me this.
I prefer freshly grinded black pepper over the fine one.
This is because the taste of better if the whole pepper is freshly grinded.
I prefer more black pepper cause i love the taste of it. I am a black pepper man, lol.
When the macaroni is much bigger and softer, add the butter and stir.
Add more water if it needed.
Add the evaporated full cream milk.
And bring it to boil.
And thats it!
Your SOPAS is ready to serve.
