If you have never had escarole and beans then you are missing out. This is one of my favorite organic dishes that I eat during the winter on a regular basis. The dish can be made more like soup, an appetizer, or main meal. I tend to serve this just on its own with fresh crusty bread.
The recipe consists of:
1 bag of cleaned, soaked and boiled for one day Canellini beans.
2 tablespoons of olive oil
2 to 6 garlic cloves
1 pound of organic escarole leaves
4 cups of organic chicken broth
1/2 package of soppresatta
1/4 teaspoon fresh cracked pepper
