Last week I posted a mushroom tomato soup to enter the Steemit Fruits And Veggies Monday Contest π πππΏππ, hosted by . It's funny as today I'm back with a mushroom tomato sauce, served with potatoes. It wasn't planned, it just happened without even realizing.
This is an easy, ready in no time recipe, no specific cooking experience needed and today I'm offering two options, based on what you have at home, tomato sauce or fresh tomatoes.
Option No. 1 - Fresh Tomatoes
Ingredients:
- 500 g mushrooms,
- 1 kg tomatoes,
- 1 onion chopped,
- 3 cloves garlic,
- 3 tbsp olive oil,
- spices (bay leave, marjoram, sage, basil, parsley etc.)
- salt,
- pepper.
First of all make sure to use well ripe tomatoes, not those half green ones as the sauce depends on it.
Wash and slice the tomatoes, add to a pen, add a little bit of water. Add the spices. Cover and let it cook till it becomes a sauce. Filter the sauce.
Suggestion: You can add whatever spice you like. I named a few as a suggestion but you can use anything you want.
Clean and slice the mushrooms. Heat the oil in a pen, add the chopped onion, garlic, salt and mushrooms, stir and let it cook till everything is tender. You don't need to add water as there's plenty in the mushroom.
Add the sauce, salt and pepper if it's needed and let it cook for another 10 minutes. Stir from time to time, especially towards the end, so that the sauce doesnβt catch on the bottom. Serve with potatoes while it's still hot.
Option No. 2 - Canned Tomato Sauce (Homemade)
Ingredients:
- 500 g mushrooms,
- 3 tbsp olive oil,
- salt,
- 375 ml tomato sauce.
This option gives you the possibility to use tomato sauce, homemade or not. I'm using my own homemade tomato sauce made of homegrown tomatoes. This sauce had onion, garlic and basil, so it's already flavored.
If you are using an unflavored sauce, you can heat it in a pen, add whatever spice and herb you like, let it cook for about 15 - 20 minutes and you have the flavored sauce as you like.
The Process
Clean, slice the mushrooms, add 3 tbsp oil to a pen, add the mushrooms and a pinch of salt and stir.
No need to add water as the mushrooms have plenty and in about two minutes you'll get plenty of water to cover it.
Cover and let it cook till almost tender, about 10 - 15 minutes.
Add the tomato sauce, season with salt and pepper if needed, stir occasionally so that the sauce doesnβt catch on the bottom. Let it cook for about 10 minutes.
Serving Suggestions
I chose potatoes cooked with a pinch of salt but you can serve it with mash potato, rice, cuscus, spaghetti or other type of pasta, basically with everything.
It's a healthy dish, ready in a short time and you can use whatever spices and herbs you like.
