Once in while it's time to clean the fridge and cabinets.
Collect everything that is about to go bad and try to make something from it.
I'm not a big fan of throwing food away.
It's sort of freestyle cooking.
I like it.
It doesn't always work out the way you planned but it's always edible.
This time it wasn't so hard though.
I found very decent stuff.
Let's cook.
I found a bunch of good stuff for a starter and a main so I will split them up. First the starter ingredients: pumpkin soup in a bag, Crème fraîche, Calabrese sausage (and parsley). All of it was still ok, but I made it because I thought the starter wouldn't be enough. (It came from the box I talked about couple days ago).
And for the main: Eggplant, half a green pepper, leftover bread, parsley, grilled red pepper in a jar, 3 leftover cheeses and a goat cheese.
First the soup. Most soup from a bag is pretty decent but it's easy to pimp it a little bit with the right ingredients. Calabrese works great. Cut it and fry it till crispy.
Warm up the soup (I know not the most rockety science dish).
Add the soup to a nice bowl and add the Crème fraîche, fried Calabrese, and parsley. The simple starter is done. I like the colors.
Now for the adventurous part. The main. The idea was to put grilled vegetables, mixed with the cheeses on bread. Lot's of vegetables and a nice way to get rid of all the bits of cheese in 1 go. I started with the eggplant. Cut it into slices.
I got a pot and poured in some olive oil and garlic, then I added the eggplant. I wanted it to fry it until mushy.
After about 10 minutes I added half of the green pepper that I cut in pieces.
While that was cooking I sliced the roasted red pepper from the jar and put them in a bowl.
After about 20 minutes the eggplant looked like this and then I added it to the peppers. It had to cool down for a while so that's when we eat the soup.
The soup was great! I came back to the kitchen and sliced all the cheeses in pieces. I then add it to the bowl. And it was time to serve.
End results.
First, the soup that was delicious and full of flavor! That organic stuff from the box is really amazing quality.
And second the grilled vegetables with cheese on bread. Also very delicious and healthy. It was way more filling though then anticipated must have been the cheese. All in all not bad for leftover cooking!
