So friends today I have come again with a new blog and today I shared the recipe of one traditional snack/biscuit from my culture which we call tikki or naan roghani. We eat it in breakfast with milk tea and it becomes very delicious. And guys you all gave me a very good response on my potato patty burger recipe blog, thank you so much for that, it means a lot. So guys now without wasting much time let’s start making this delicious breakfast snack.
Ingredients needed
Flour
Sugar
Ghee
Egg
Yeast
Baking soda
Salt
Star anise
Cardamom
Making process
So guys to make tikki, first take a bowl and add 10 cups flour in it. Then take a pot and add 2 cups sugar and 3 cups water in it. Now place it on the stove until the sugar melts properly in the water. Now in another pot add 1 and a half cup ghee and melt it too.
Now add the ghee little by little into the flour and mix it properly. It was not mixing well in the bowl so I transferred it into another thing and kept mixing it properly while adding ghee. At the end when we press the flour in our fist and if it holds the fist shape, it means we added a good amount of ghee.
After this I again transferred the flour into a bowl and then added 2 eggs in it and mixed it properly too. After this I added 1 and a half tablespoon yeast, 1 and a half tablespoon cardamom, 1 tablespoon star anise, half teaspoon salt and half teaspoon baking soda. After adding all these things, I mixed them properly and then transferred it into a bigger pot because the bowl became too small.
Kneading the dough
Now after this, the sugar water that I made earlier should be added little by little into this mixture and knead it properly for 10 minutes. After kneading it properly, cover it with the pot lid and give it rest for 2 hours.
Cooking the tikki
Now after 2 hours preheat the pressure cooker for 10 minutes. Then I divided this flour mixture into 4 pieces and cooked them one by one. I made them round and flat and then made small holes in them with the help of a fork so they can cook properly.
At the end I applied egg yolk on top of them. Then I kept them in the preheated pressure cooker on low flame for 1 hour so they cook properly. By the way you can also make it in the oven but our oven became broken so that is why I made it in the pressure cooker.
