Steamed Vegetables Over A Bed Of Rice
Today's breakfast had a good start on the five colors of vegetables needed each day for healthy eating. This platter is loaded with green veggies and some yellow and red peppers. Added to this array of colors are the white of the onions and garlic. One meal and four of the colors needed to start the day off. All this is served with a cup of fresh rice that has been cooking in the rice pot.
Red peppers of all kinds have more than 200 times the vitamin C required for the day and a good supply of Vitamin A, B6, and folate. All peppers are high in antioxidants. Red peppers are extremely good for your night vision. Green peppers are just under ripe red peppers. Hot Paprika and chili peppers offer the same benefits, but with extra Capsaicin. This is what gives them that extra kick! Those are just a few reasons to include peppers in your daily diet.
Asparagus has a high amount of vitamin K, which helps to clot the blood. You want to go easy on this veggi if you are taking blood thinners. Asparagus is a good Anti-inflammatory and Antioxidant, as well as a good Diuretic. It is a good source of Vitamin B1 Thiamine and contains lots of fiber.It helps a lot with digestive problems.
