I don't often write food blogs although have done a few here and there mainly more to punctuate some point I was trying to make rather than actually talk about the food. Here's one I did about a month ago as an example. Breaking bread. Anyway tonight I wanted to share an actual dish I make every so often so I guess this post could qualify as an actual food blog.
So, this recipe is a very simple one and can be prepared as breakfast, brunch, lunch or dinner; In fact, I had this for dinner tonight. The very picture you see above. It's quite flexible too as it can be a light meal or used as more of a side for a steak or chicken maybe. I generally just have it as you see in the picture though. So here goes. Warning: It's bloody simple to make, and also bloody tasty!
You will need:
Rye bread (thick cut - I suggest about 40mm thick)
An avocado (reasonably ripe, but not too mushy)
A radish (Thinly sliced)
Some mint leaves (Chopped or whole)
A lemon
A clove of garlic
A small red onion (finely diced)
2 eggs (poached)
Salt and pepper
Here's how you you do it:
Mash the avocado adding a squeeze of lemon juice and some very finely chopped red onion (not too much). Add salt and pepper to taste. Toast the rye bread and after cutting the garlic clove in half gently rub the garlic on the toasted bread. Don't rub too hard as raw garlic can be potent! Thickly spread the avocado mix onto the rye toast (the garlic'ed side) and throw on some mint leaves and radish. Don't put too much mint or radish on, just enough to get a little bit with each bite. Add a poached egg on the top and add salt or pepper to taste. Add a lemon wedge to the side of the plate and, bibbety bobbety boo, you're in business. I generally soft-poach the egg to get some runny-ness happening but if that freaks you out poach the egg a little more. I have also simply sliced boiled egg on the top as well. Works the same.
Variations
The options are limitless for this little dish. I sometimes BBQ chorizo sausage and add it to the side of the plate and on one occasion I grilled haloumi cheese as well which worked a treat. I've made this as a side dish for a steak dinner as well which went great! Another variation is to spread the garlic'ed rye bread with a little hummus prior to slathering on the smashed avocado. Yum! I have also added feta cheese to the smashed up avocado as well which was really nice. I guess it's only limited to what the person likes and a little experimentation on the basic recipe will uncover your favourite choices.
There you have it, a little easy to make thing that is pretty healthy as well. It's filling and is sort of refreshing also; The mint and lemon assist there.
