These are my family’s favorite. Drizzle on the Maple syrup and either some bacon or fruit, these do not last long. What's more they are super easy to make.
This time I did put some of the mixture in the waffle maker as well. Enjoy!
Ingredients: (feeds 4, you can easily half the amounts for 2)
- 6 eggs
- 225g (8oz) gluten free plain flour
- 2 heaped teaspoon baking powder
- 280 ml milk
How to:
- Separate the eggs, whites in one bowl yolks in another.
- Add flour, baking powder and milk to the bowl with the yolks in and mix until you get a smooth batter.
- Whisk the whites with a pinch of salt until they form stiff peaks, then fold into the batter.
- Heat a non stick crepe or frying pan over a medium heat, pour some of the batter into the pan and cook for a minutes, or until it starts to bubble on the top.
- Carefully flip and cook for a further minute until golden. The pancake should fluff up.
