Recipe Attempt # 1: Fudgesicle In A Bowl
This past week has been a bit of an epic failure in the eating well department. Aside from the fact that I was mildly and pretty much completely incapacitated, it was also Starch Fattyimus season around my toasty abode. There were pumpkin rolls adorning my counter tops, mint chocolate fudge dripping off of friend-offered paper plates, and let's not forget about almond bark and chocolate covered pretzels! Those little carb and sugar coated saboteurs are especially devious, I often find their contorted forms presented in the most convenient places. Like if I need a sock out of the sock basket, or next to the wood stove, or strangely enough, in a plastic zipper bag on my nightstand, imagine that!
Somehow, I managed to lose weight over Christmas break (guess that fever was good for something), however, I just feel gross if I don't adhere to my sugar free, mostly low starch regimen. That said, one thing that helps me stick to the sugar free road of well-being is having a few treats available to grab and snack on. Ice cream is something that I enjoy eating once in a while, and as I still haven't discovered my recipe of ice cream enjoyment utopia as of yet, I have decided to go on a recipe development quest for the next couple of weeks, or until I discover "the one." That's right, it's sugar free, "healthy" ice cream development time.
Today, as I had to deal with my destructive moose problem, I didn't have a lot of time to work on project development. When you have fun things to do like lift your husband in a tractor bucket so he can install greenhouse flooring as a hay barn door, well, ice cream creation takes a back seat. With that disclaimer, today's experiment is of the no churn variety.
I started with unearthing my blender from my kitchen appliance armoire.
And pouring two cups of unsweetened almond milk into my lovely little Ninja of ice crushing doom.
As I tend to put hydrolyzed collagen into a good portion of my comestibles, I of course added some of that skin and gut-enhancing ingredient. If you haven't added hydrolyzed collagen into your life, I totally recommend it! My hair, skin, and nails glow, and I can't even remember what indigestion and heartburn feel like. It's amazing how chains of amino acids can contribute to feeling awesome!
Along with the collagen, I threw in some whey protein, unsweetened cocoa powder, some Gentle Sweet sweetener, stevia, glucomannan, and vanilla.
Then I gave the concoction a blend!!
Once my potential ice cream was thoroughly mixed, I poured the milkshake looking conglomeration into a bread pan, covered it with plastic wrap, and popped it into the freezer for awhile.
Once the mixture achieved a frozen state, I removed it from the freezer.
To be honest it looked more like a frozen mud puddle than a delectable, frozen ice cream.
I scooped some of the concoction into a bowl, took a picture of the result for you all to behold, and gave it a taste.
It tastes nothing like ice cream.
It does however, taste just like a fudgesicle. I like fudgesicles. A lot.
So, with the first, albeit lazy round of ice cream attemptage over, I can't really claim success or failure. No ice cream was created, but a yummy frozen dessert that I kinda really like is now sitting in my freezer. So, hello win!
However, I will endeavor to continue on the healthy, sugar-free ice cream quest. I want a bunch of bread tins full of luscious, creamy, healthy ice cream adorning every shelf of my house freezer. Banana nut, mint chocolate chip, heck! I even want to come up with a chocolate chip cookie dough kind! It shall be achieved!!! In fact, if there is a flavor of ice cream that you, my dear followers, love dearly, just suggest it in the comments and I will add it to the attempt list. We will achieve healthy ice cream greatness, no matter the cost! Well, I am a bit of a cheapskate, so if you want a truffle oil and champagne flavored ice cream that is garnished with edible gold, I might balk a bit. Just saying.
We're going to rock this experiment! I know cause I have a whole bunch of rock salt sitting in my laundry room just waiting to be added to my ice cream maker's innards! WOO!
Fudgesicle In A Bowl-Sugar Free
2 cups of unsweetened almond milk
3 Tablespoons hydrolyzed collagen
4 Tablespoons Whey Protein
2 Tablespoons Unsweetened Cocoa Powder
3 Tablespoons Gentle Sweet*
3 doonks of powdered stevia extract (a doonk is 1/32 of a teaspoon)
1/4 teaspoon of glucomannan powder*
1 teaspoon vanillaAdd all ingredients to a blender, blend on high until well combined.
Pour mixture into a bread pan, cover with plastic wrap, and freeze until well frozen.
Scoop and enjoy!
Gentle Sweet is a xylitol, erythritol, stevia sweetener produced by Trim Healthy Mama. It will not mess with your blood sugar and has a sugar like taste and consistency. Any sweetener that fits your diet philosophy can be used instead, you will just have to play around with the amount til you get the sweetness level that you enjoy!
Glucomannan is ground up konjac root. It's fiber and will thicken anything!
