Yuuuuum!
I had never made a 'Rainbow Bowl' at home before... and lately I have being seeing cute pictures of them and I was like "I want to try!"
I mean I guess it's kind of like a glorified salad... but I am all down for salad at the moment. With Tough Mudder coming up for me and my husband in 3 months I am trying to eat healthy. I loved this Rainbow Bowl, I want to try out other versions, but this could be a great way to get your partner, kid or even yourself to have a nutritious and delicious meal!
Step 1: Base
For the base of the Rainbow bowl I want to experiment with different options like brown rice, basmati rice, oats (for a breakfast rainbow bowl maybe?), or quinoa...
Step 2: Colours!
The possibilities are endless... it was so fun walking around the veg section thinking about what I could put in my bowl. Today I went for spinach, capsicum, tomato, carrot and red onion. I also added sweetcorn after (I forgot about it at this stage haha)
Step 3: Protein
There are so many quick and easy options of different proteins you can add. You could make the Rainbow bowl veggie or vegan by adding things like tofu, or add meats or fish. Today I added chicken. I sliced up a chicken breast into thin strips and coated it in a little oil and fajita seasoning. Then I cooked it in my airfryer!
