Who said dieting is boring??!
This is a good dish for batch cooking!
Ingredients for 4 portions
600gr lean minced beef (about 4%fat per 100g)
240g canned chick peas
150g chopped onion
4 thin courgettes (about 200g each)
50g tomato puree
200gr canned sweetcorn
50g tahini paste
2 garlic cloves (minced)
80gr fat free Greek yogurt for topping ( optional)
1 lemon, juiced
1 teaspoon salt
1/3 teaspoon cardamom powder
1 teaspoon oregano or Italian herbs
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon chilli powder (optional)
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/3 cup water
Chopped fresh mint or parsley (optional)
If you don’t have some spices included in this recipe just substitute with little bit of all spice and paprika powder.
Method
Step 1. Preheat oven to 200C. Courgettes need to be washed and cut lengthwise. Bake or grill in the oven on each side for about 30min or till soft. The cook time may be dependent on the size of your courgettes.
Step 2. Mix all spices in small bowl with salt and set aside.
Step 3. Fry (use water) the ground beef and chopped onions in a medium saucepan on medium-high heat. Cook until beef is browned and then add the lemon juice, spices, tahini, tomato paste, garlic and water. Stir until well combined and add more water if the mixture is too thick.
Step 4. Add canned chickpeas and sweetcorn
Step 5. Taste your beef mixture and season more to taste. Place cooked courgettes on the plate add the beef mixture and top it with Greek yogurt.
Step 6. Garnish with your choice of fresh herbs (I chose parsley) and sliced almonds or pine nuts for a nice crunch.
Divide between 4 .Freeze up to 2 months without nuts and yogurt.
