Lets talk beets. These lovely roots are a pregnancy superfood because they are high in folate, which helps prevent birth defects. They are also high in fiber and manganese. Their color is from betalin pigments. Betalin has detoxifying properties that help purify your blood and liver. I roasted some to snack on and put in my smoothie. I peeled them, chopped them and tossed them in olive oil with a little salt and pepper. Then baked them at 400F for 30 min stirring half way through.
- 1 cup orange juice
- 1 banana
- 1 cup roasted beets
- 1 cup frozen strawberries
Put all ingredients in the blender and blend until smooth. Enjoy!
